Stovetop Macaroni and Cheese

2 1/4 cups elbow macaroni
1 cup fat free milk
3/4 cup shredded sharp cheddar cheese
3/4 cup monterey jack cheese
1/3 cup shredded American cheese
1/3 cup mozzarella cheese
1/2 tsp white pepper

(1) Cook macaroni according to package directions, drain, return to pot
(2) Add milk, cheddar, monterey, american, mozzarella and pepper
Cook over low heat
Stirring constantly until cheese melts about 5 minutes

Note: You can substitute your favorite cheeses
Like I used only sharp cheddar, and mozzarella

Greek Chicken

6 medium sized potatoes, quartered
3 lbs. chicken pieces
2 large onions quartered
1/2 cup water
3 tsp dried oregano
1 tsp salt
1/2 tsp black pepper
1 tbsp olive oil

(1) Place potatoes in bottom of slow cooker
Add chicken, onions, garlic
(2) In small bowl mix water with oregano, salt, and pepper
(3) Pour over chicken and potatoes
Top with oil
(4) Cover
Cook on high 5-6 hours or on low 9-10 hours

Pizza Meat Loaf

1 envelope Lipton Recipe Secrets Beefy Onion soup mix
2 lbs ground beef
1 1/2 cups fresh bread crumbs
2 eggs
1/4 cup water
1 cup pasta sauce
1 cup sh redded mozzarella cheese


(1) preheat oven to 350 degrees
combine all ingredients except 1/2 cup pasta sauce and 1/2 cup cheese in large
bowl
(2) Shape into loaf in 13x9 ichh baking or roasting pan
top with remaining 1/2 cup of sauce
bake 50 minutes
sprinkle 1/2 cup cheese
bake 10 minutes more
Let stand 10 minutes before serving

Simple pancakes

1 cup all purpose flour
1 tsp white sugar
1 tsp salt
1 tsp baking soda
2 eggs
1 cup milk
1 tsp vanilla extract
1 tbsp vegetable oil
1 tsp margarine softened

(1) In a bowl stir together flour, sugar, salt, and baking soda
In separate large bowl beat together eggs, milk, vanilla, vegetable oil, and
margarine
Stir dry ingredients into egg mixture and mix until smooth
(2) Heat lightly oiled griddle
pour or scoop batter onto griddle 1/4 cups for each pancake
brown on both sides serve hot.

Simple pancakes

Chocolate Eclair Cake

1 (16 ounce) packages graham crackers
2 (3.5) instant vanilla pudding mix
4 cups milk
1 (16 ounce) frozen whipped topping, thawed
1 (16 ounce) packages prepared chocolate frosting

1. Line the bottom of a 9x13 inch baking pan with graham crackers
In a large bowl combine milk, and vanilla pudding according to directions on box
Fold in the whipped topping
Spread a layer of pudding mixture over graham crackers
alternate graham crackers and pudding layer
cook container of prepared frosting for one minute in microwave
pour over top of cake
refrigerate for at least 12 hours before serving

Chocolate Eclair Cake

Lamb

1/2 cup olive oil
2 tbs dried oregano
2 teaspoons ground mustard
1 tsp garlic powder

(1) combine and pour over lamb
(2) Bake at 350 degrees
Remember for medium rare like my men like it the temperature should be 120 degrees , but if you like it well done it should be 180 degrees.

Sorry, these are not in order. I hope you will have going through and finding what you need. Have fun, I did trying them out. All of these passed the approval of Philip and Buddy. So lets get cooking.

Pineapple Bread

2 eggs
1/2 cup melted butter
1 cup white sugar
1 cup crushed pineapple with juice
1 tsp vanilla extract
2 1/2 cups all purpose flour
3 tsp baking powder
1/2 tsp baking soda
3/4 tsp salt
1/2 cup walnut

(1) Preheat oven to 350 degrees. Grease a 9x5x3 loaf pan
(2) Beat eggs slightly, add butter, sugar, beat smooth
stir in pineapple and vanilla
(3) In a separate bowl put flour, baking powder, soda, salt and walnuts
stir well and pour into pineapple mixture
stir to moisten
put into pans
Bake in 350 degrees oven for 1 hour, test with toothpick, let stand 10 minutes
Remove from pan, cool and wrap

Fettucinne with Walnut Sauce

1/2 cup part skim ricotta cheese
1/4 cup low sodium chicken broth
6 ounces fettucinne (or very thin spaghetti)
1/4 cup walnuts
1/4 cup crumbled gorgonzola cheese
2 tablespoons finely chopped parsley

(1) In small bowl combine ricotto, broth, and lemon. Mix until smooth
(2) cook fettucinne drain and place in serving bowl, top with ricotto mixture
sprinkle with crushed walnuts, gorgonzola, and parsley
Toss to coat

Blackberry Cobbler

1/2 cup butter
2 cups self rising flour
2 cups white sugar
2 cups milk
3 1/2 cups blackberries (can use blueberies instead)

(1) Preheat oven to 350 degrees. Once oven temperature is reached melt butter in a
9x13 inch baking pan
(2) In a medium bowl stir together flour, sugar, and milk. Batter will be
slightly lumpy. Pour mixture on top of melted butter in baking pan
DO NOT MIX BUTTER AND MIX TOGETHER
(3) Drop blackberries into batter. If more crust is desired add less blackberries.
Bake for one hour or until golden brown.

Blackberry Cobbler

Apple Crisp (slow cooker)

6 cups cooking apples (cut and sliced up)
1/2 cup quick oatmeal
1/2 cup brown sugar
1/2 cup flour
2 tbsp margarine
1/2 cup ground cinnamon

(1) place apples in slow cooker sprayed with non fat cooking spray
(2) combine remaining ingredients in a mixing bowl until crumbly
(3) sprinkle mixture over apples
(4) cover
cook on low for 4 hours or high for 2 hours. (Philip's favorite)

Just Rice Pudding

1 cup long grain uncooked white rice
1 cup sugar
8 cups milk
3/4 cup fat free, cholesterol free, egg product
1 cup milk
2 tsp vanilla
1/4 tsp salt
1/4 tsp. ground nutmeg or cinnamon

(1) combine rice, sugar, 8 cups milk in crock pot, stir
(2) cover cook on high 2 hours or until rice is tender
(3) beat together egg substitute, 1 cup milk, vanilla, salt
add to slow cooker stir
(4) cover cook on high 25-30 minutes

Hint: add about 1/2 cup cholesterol free, egg free product to make thicker, cook
another 30 minutes or so if not thick enough.

My husband asked me the other day why I did not cook like I did when we were first married. I guess I had gotten pretty lazy with boxed dinners or going out to eat. But lately I have been cooking like crazy and you know I really do love to cook. It is actually fun, and so I have decided to put together a little blog book of recipes. You will see that a lot of them are slow cooker recipes. I love crock pots, they make things a lot easier. So here begins my adventure....
