Meatballs and spaghetti

for meatballs:
1 1/2 lbs ground beef
2 eggs
1 cup bread crumbs
oil


Blend all ingredients together then form the meatballs.
Slightly brown in oil in pan

28 ounce tomato sauce
10 3/4 can tomato soup
6 oz can tomato paste

Mix together

Put meatballs in the crock pot
Pour sauce over them
stir gently

Low for 6-8 hours

Chocolate Chip Blonde Brownies

3 cups and 2 tbs. all purpose flour
1 tbs. 1/2 teaspoon baking powder
3/4 tsp salt
1 cup 1 tbs. unsalted butter
1 2/3 cups 1 tbs white sugar
1 2/3 cups 1 tbs packed brown sugar
1 1/2 tsp vanilla extract
5 eggs
2 3/4 cup semi sweet chocolate chips

350 degree oven
This recipe makes enough for two big pans
Blend all of the above ingredients until smooth
Pour into slightly greased pan
Key make sure it is not too greasy
Bake for 35 to 40 minutes

Spaghetti Sauce

1 can of tomato paste
1 can of tomato sauce
1 can of diced tomatoes
1 package of ground turkey


1. Brown meat in a little bit of olive oil
2. Add all three cans
3. heat thoroughly
4. pour over farfalle, spaghetti, or ziti

Raspberry Tilapia

1/4 cup + 3 tbs olive oil
1/4 cup + 3 tbs raspberry vinegar
1/4 cup + 3 tbs honey
1 3/4 tsp yellow mustard
1 tsp dill weed

(1) Preheat oven to 350 degrees
grease pan
(2) whisk together the ingredients
(3) lay a single layer of tilapia out
pour mixture over the fish
coating each filet
(4) bake uncovered for 20 minutes

Raspberry Tilapia

Strawberry Bread

2 cups fresh strawberries
3 1/8 cup all purpose flour
2 cups white sugar
1 tbs ground cinnamon
1 tsp salt
1 tsp baking soda
1 1/4 cup vegetable oil
4 eggs beaten
1 1/4 cup chopped pecans (or I like walnuts!)


(1) Preheat oven to 375 degrees
butter and flour 2 9x5 pans
(2) slice strawberries and place in medium sized bowl
sprinkle lightly with sugar and set aside
(3) combine flour, sugar, cinnamon, salt, and baking soda in large bowl, mix well
blend oil and eggs into strawberries
add strawberries mix to flour
divide batter into pans
(4) bake for 45-50 minutes

SUMMER TUNA SANDWICH

2 cans tuna drained and flaked (6oz)
1 apple pealed and chopped
1/2 cup raisins
1/2 cup mayonnaise
1 tbs. sweet pickle relish


In a bowl combine the ingredients and put on white bread. Yummy and cool

Yummy Dump Cake

1 (18.25 ounce) package yellow cake mix
1 (16 ounce) frozen whipped topping, thawed
1 (5 ounce) package instant vanilla pudding mix
1 (20 ounce) can crushed pineapple drained


(1) Prepare the cake mix as directed, let it cool

(2) Crumble half of the cake into the bottom of a bowl (punch bowl)

(3) Pile on some of the whipped topping, the prepared vanilla pudding, 1 can of the crushed pineapple

(4) Crumble half of the cake on top of these piles

(5) Top with whipped cream

May put cut and sliced strawberries over layers or just sprinkle red sugar crystals over the whipped cream for a pretty look.

Brocolli and Ham Dinner

10 3/4 can 98% fat free cream of mushroom soup
8 oz jar low sodium fat free cheese spread (Velveeta)
1 cup skim milk
1 cup instant rice, uncooked
1 rib celery chopped
1 small onion chopped
3 cups cooked ham (chopped or shredded)
16 oz pkg. frozen broccoli cuts, thawed and drained

(1) In a bowl mix together cream of mushroom soup, cheese spread, milk, rice, celery and onion
(2) Stir in ham
(3) Cover cook on low 3-4 hours
(4) One hour before serving time, stir in broccoli

Ham and Scalloped Potatoes

1 1/2 lbs ham chopped or cut into pieces
8-10 medium sized potatoes, peeled and thinly sliced
2 onions peeled and thinly sliced
1/2 tsp salt
1/4 tsp black pepper
1 cup fat free grated cheddar or American cheese
10 3/4 can 98% fat free cream of celery soup
paprika


(1) Layer half of ham, potatoes, and onions in slow cooker
Sprinkle with half the salt and peppers, then half the grated cheese
(2) Repeat the layers
(3) Spoon undiluted soup over ingredients
(4) Cook on low 8-10 hours or high 4 hours

Ham and Scalloped Potatoes

Oriental Chicken in Crock Pot

2 tbs vegetable oil
1/3 cup soy sauce
2 tbs brown sugar
2 tbs water
1 tbs minced garlic
1 tsp ground ginger

(1) Combine all ingredients, may double if you like extra
(2) Pour over chicken
(3) Cook on low for 6 hours or high for 3 hours

Jenny Craig's Spinach Lasagna


2 cups low fat cottage cheese
1/2 cup egg substitute
1pkg. 10 ounce frozen chopped spinach, thawed and drained well
1 jar fat free spaghetti sauce
cooked lasagna noodles
2 cups shredded mozzarella cheese
1/4 cup of grated parmesan cheese


(1) Combine first three ingredients in a medium bowl, stir well and set aside.

(2) Spread spaghetti sauce, in a 13x9x2 inch baking dish
Place three noodles over sauce some of the spinach mixture, spaghetti sauce, and
some of both cheeses.

(3) Keep layering
The last thing you put on should be one of the cheeses

(4) Bake uncovered at 350 for 35 minutes

(5) let stand 10 minutes

Oatmeal Butterscotch Cookies

3/4 cup + 3tbs. butter, softened
3/4 cup + 3tbs. white sugar
3/4 cup + 3tbs. brown sugar
3 eggs
1 1/2 cup + 1tbs all purpose flour
1 1/4 tsp baking soda
1/2 tsp ground cinnamon
1/2 tsp salt
3 3/4 cups rolled oats
2 1/2 cups butterscotch chips

(1) 375 degrees
(2) beat butter, white sugar, brown sugar
Add eggs and vanilla beating well
(3) Stir together flour, baking soda, salt, and cinnamon
(4) Add flour mixture to butter mixture
(5) Stir in oats and butterscotch chips
(6) Drop by rounded spoon fulls on ungreased cookie sheet
(7) Bake 8 to 10 minutes

Oatmeal Butterscotch Cookies

Hamburg, Cabbage, and Potato Dinner

1 lb extra lean ground beef
6 medium sized potatoes quartered
1 medium sized head of cabbage (cut in chunks)
salt
black pepper
2 cups water


(1) Brown ground beef in nonstick skillet
(2) Layer in slow cooker potatoes, cabbage, and hamburger
(3) Pour water over top
(4) Cover, cook on low 7-8 hours or until vegetables are tender

Quick Lasagna

1/4 lbs extra lean ground beef
16 oz. pkg broad egg noodles
2 cups fat free cottage cheese
1 cup shredded low fat mozzarella cheese
1/2 cup grated parmesan cheese
2 1/2 cups spaghetti sauce


(1) Brown ground beef in a nonstick skillet, set aside
(2) Cook noodles and drain
Toss noodles with all cheeses
(3) Mix together browned beef and spaghetti sauce
(4) Spoon 1/3 of the meat sauce in bottom of slow cooker
(5) Layer in 1/2 of noodles
repeat layers
(6) cover cook on low 5-6 hours

10 Layer Slow Cooker Recipe

1 1/2 lbs ground beef
6 medium potatoes thinly sliced
1 medium onion thinly sliced
1/2 tsp salt
1/2 tsp pepper
15 ounce can corn undrained
15 ounce can peas undrained
1/4 cup water
10 3/4 oz. can fat free, low sodium, cream of mushroom sauce

(1) Brown ground chuck in nonstick skillet
(2) Layer 1: 1/4 potaotes mixed with 1/2 onion, add salt and pepper
(3) Layer 2: 1/2 of corn
(4) Layer 3: 1/4 of potaotes and onions
(5) Layer 4: 1/2 can of peas
(6) Layer 5: 1/4 of potatoes with onions
(7) Layer 6: remaining corn
(8) layer 7: remaining potatoes
(9) Layer 8: remaining peas and water
(10) Layer 9: ground chuck
(11) Layer 10: soup
(12) cover, cook on high for 4 hours

Slow Cooked Chilli

8 ounce tomato sauce
2 lbs extra lean ground beef
2 16 oz. cans kidney beans rinsed and drained
2 14 1/2 oz diced tomatoes undrained
2 medium sized onions chopped
minced garlic
2 tbs. chilli powder
2 tsp salt
1 tsp black pepper
shredded cheese


(1) Brown hamburger
(2) place in slow cooker
(3) Add all ingredients except cheese
(4) Cover cook on high for 4 hours

Top with shredded cheese

Slow Cooked Chilli

Casserole for Skinnies

1 small head of cabbage, chopped
2 large onions diced
6-8 ribs of celery chopped
2 lbs ground beef
2 15 oz cans stewed tomatoes
2 cans green beans drained
1 tsp dried basil
1 tsp dried oregano
1/2 tsp dried thyme
3-4 cups of water

(1) Combine all ingredients in slow cooker
(2) Cook on low 7-9 hours

Casserole for Skinnies

Slow Cooker Pizza

1 tsp olive oil
1 1/2 lbs ground turkey
1/4 cup onions
28 oz spaghetti sauce
4 1/2 oz. sliced mushrooms drained
1/2 tsp Italian seasonings (basil, oregano, thyme, rosemary, sage)
12 oz package wide egg noodles (slightly undercooked)
2 cups fat free shredded mozzarella cheese
2 cups shredded cheddar cheese


(1) In a large skillet cook turkey and onions in olive oil until no longer pink, drain
(2) Stir in spaghetti sauce, mushrooms and Italian seasoning
(3) Spray slow cooker with non/fat cooking spray
Spread 1/4 of meat sauce in pot
(4) Cover with 1/3 of noodles
Top with 1/3 of cheeses
(5) Repeat layers twice
(6) Cover cook on low for 3 hours
Do not Overcook

Stovetop Macaroni and Cheese

2 1/4 cups elbow macaroni
1 cup fat free milk
3/4 cup shredded sharp cheddar cheese
3/4 cup monterey jack cheese
1/3 cup shredded American cheese
1/3 cup mozzarella cheese
1/2 tsp white pepper

(1) Cook macaroni according to package directions, drain, return to pot
(2) Add milk, cheddar, monterey, american, mozzarella and pepper
Cook over low heat
Stirring constantly until cheese melts about 5 minutes

Note: You can substitute your favorite cheeses
Like I used only sharp cheddar, and mozzarella

Greek Chicken

6 medium sized potatoes, quartered
3 lbs. chicken pieces
2 large onions quartered
1/2 cup water
3 tsp dried oregano
1 tsp salt
1/2 tsp black pepper
1 tbsp olive oil

(1) Place potatoes in bottom of slow cooker
Add chicken, onions, garlic
(2) In small bowl mix water with oregano, salt, and pepper
(3) Pour over chicken and potatoes
Top with oil
(4) Cover
Cook on high 5-6 hours or on low 9-10 hours

Pizza Meat Loaf

1 envelope Lipton Recipe Secrets Beefy Onion soup mix
2 lbs ground beef
1 1/2 cups fresh bread crumbs
2 eggs
1/4 cup water
1 cup pasta sauce
1 cup sh redded mozzarella cheese


(1) preheat oven to 350 degrees
combine all ingredients except 1/2 cup pasta sauce and 1/2 cup cheese in large
bowl
(2) Shape into loaf in 13x9 ichh baking or roasting pan
top with remaining 1/2 cup of sauce
bake 50 minutes
sprinkle 1/2 cup cheese
bake 10 minutes more
Let stand 10 minutes before serving

Simple pancakes

1 cup all purpose flour
1 tsp white sugar
1 tsp salt
1 tsp baking soda
2 eggs
1 cup milk
1 tsp vanilla extract
1 tbsp vegetable oil
1 tsp margarine softened

(1) In a bowl stir together flour, sugar, salt, and baking soda
In separate large bowl beat together eggs, milk, vanilla, vegetable oil, and
margarine
Stir dry ingredients into egg mixture and mix until smooth
(2) Heat lightly oiled griddle
pour or scoop batter onto griddle 1/4 cups for each pancake
brown on both sides serve hot.

Simple pancakes

Chocolate Eclair Cake

1 (16 ounce) packages graham crackers
2 (3.5) instant vanilla pudding mix
4 cups milk
1 (16 ounce) frozen whipped topping, thawed
1 (16 ounce) packages prepared chocolate frosting

1. Line the bottom of a 9x13 inch baking pan with graham crackers
In a large bowl combine milk, and vanilla pudding according to directions on box
Fold in the whipped topping
Spread a layer of pudding mixture over graham crackers
alternate graham crackers and pudding layer
cook container of prepared frosting for one minute in microwave
pour over top of cake
refrigerate for at least 12 hours before serving

Chocolate Eclair Cake

Lamb

1/2 cup olive oil
2 tbs dried oregano
2 teaspoons ground mustard
1 tsp garlic powder

(1) combine and pour over lamb
(2) Bake at 350 degrees
Remember for medium rare like my men like it the temperature should be 120 degrees , but if you like it well done it should be 180 degrees.

Sorry, these are not in order. I hope you will have going through and finding what you need. Have fun, I did trying them out. All of these passed the approval of Philip and Buddy. So lets get cooking.

Pineapple Bread

2 eggs
1/2 cup melted butter
1 cup white sugar
1 cup crushed pineapple with juice
1 tsp vanilla extract
2 1/2 cups all purpose flour
3 tsp baking powder
1/2 tsp baking soda
3/4 tsp salt
1/2 cup walnut

(1) Preheat oven to 350 degrees. Grease a 9x5x3 loaf pan
(2) Beat eggs slightly, add butter, sugar, beat smooth
stir in pineapple and vanilla
(3) In a separate bowl put flour, baking powder, soda, salt and walnuts
stir well and pour into pineapple mixture
stir to moisten
put into pans
Bake in 350 degrees oven for 1 hour, test with toothpick, let stand 10 minutes
Remove from pan, cool and wrap

Fettucinne with Walnut Sauce

1/2 cup part skim ricotta cheese
1/4 cup low sodium chicken broth
6 ounces fettucinne (or very thin spaghetti)
1/4 cup walnuts
1/4 cup crumbled gorgonzola cheese
2 tablespoons finely chopped parsley

(1) In small bowl combine ricotto, broth, and lemon. Mix until smooth
(2) cook fettucinne drain and place in serving bowl, top with ricotto mixture
sprinkle with crushed walnuts, gorgonzola, and parsley
Toss to coat

Blackberry Cobbler

1/2 cup butter
2 cups self rising flour
2 cups white sugar
2 cups milk
3 1/2 cups blackberries (can use blueberies instead)

(1) Preheat oven to 350 degrees. Once oven temperature is reached melt butter in a
9x13 inch baking pan
(2) In a medium bowl stir together flour, sugar, and milk. Batter will be
slightly lumpy. Pour mixture on top of melted butter in baking pan
DO NOT MIX BUTTER AND MIX TOGETHER
(3) Drop blackberries into batter. If more crust is desired add less blackberries.
Bake for one hour or until golden brown.

Blackberry Cobbler

Apple Crisp (slow cooker)

6 cups cooking apples (cut and sliced up)
1/2 cup quick oatmeal
1/2 cup brown sugar
1/2 cup flour
2 tbsp margarine
1/2 cup ground cinnamon

(1) place apples in slow cooker sprayed with non fat cooking spray
(2) combine remaining ingredients in a mixing bowl until crumbly
(3) sprinkle mixture over apples
(4) cover
cook on low for 4 hours or high for 2 hours. (Philip's favorite)

Just Rice Pudding

1 cup long grain uncooked white rice
1 cup sugar
8 cups milk
3/4 cup fat free, cholesterol free, egg product
1 cup milk
2 tsp vanilla
1/4 tsp salt
1/4 tsp. ground nutmeg or cinnamon

(1) combine rice, sugar, 8 cups milk in crock pot, stir
(2) cover cook on high 2 hours or until rice is tender
(3) beat together egg substitute, 1 cup milk, vanilla, salt
add to slow cooker stir
(4) cover cook on high 25-30 minutes

Hint: add about 1/2 cup cholesterol free, egg free product to make thicker, cook
another 30 minutes or so if not thick enough.

My husband asked me the other day why I did not cook like I did when we were first married. I guess I had gotten pretty lazy with boxed dinners or going out to eat. But lately I have been cooking like crazy and you know I really do love to cook. It is actually fun, and so I have decided to put together a little blog book of recipes. You will see that a lot of them are slow cooker recipes. I love crock pots, they make things a lot easier. So here begins my adventure....
